Dinner at Stanley's

If Zach and Melissa were to ever open a restaurant, they would name it after Zach's grandfather and future pug, Stanley. Tonight, I enjoyed a homemade meal by Chef Zach in the Lincks abode. Chef Zach made ramen!! Cho oishii! 

I am so thankful and blessed to have Zach and Melissa in my life. Not only do they feed me delicious food, but they open up their home and their lives to me so we can live life together. Praise God for their generosity, love and humor. :)

Humility

It's always humbling to be removed from a place and explore a place that's bigger and unknown. This Christmas season, I really didn't want to be in Vegas, but visiting The Valley of Fire State Park reminded me that no matter where I am, Christ's love never leaves or will leave me. We only got to explore a small portion of the park, but I was excited to feel a sense of adventure, wonder and joy again. I'm thankful to be celebrating this holiday season with parents who love me so much. So much it's overwhelming at times.....but nonetheless, I've come to realize it's His love through my parents, friends and family that's always pursuing me and I need to constantly remind myself to turn to Him in surrender and receive it. Continue to open up my heart Lord to your will and your way. Help me not think less of myself, but think of myself less.

On another note - The Valley of Fire State Park is an awesome park to visit when you're in Vegas and have a car. It's only an hour drive north of the strip and a $10/car fee. I've never seen so much red rock before. And 250 million years ago, this area was a sea! Crazy.... people compare this valley to Mars...I've never been to Mars, but sure, it looks different! Ha! I'd definitely come back again and spend at least a half day here. We spent too much time outlet shopping that we only caught the last 1.5 of the park being open before we had to leave. Nonetheless, a great place to get outdoors and explore and be reminded of His true beauty and wonder!

Yasukochi’s Sweet Stop

My friend Christine brought me to Yasukochi's Sweet Shop to try the Coffee Crunch Cake. I learned it's been open for 40+ years by Moses and Hatsy (pictured to the right) Yasukochi. Work Field Trip: Ai WeiWei Art Exhibit on Alcatraz

It was nice to get out of the office and go on a little field trip for work today.  Instead of heading to the office, a few of us from the Marketing Team went to Alcatraz to check out Ai WeiWei's art exhibit to get some inspiration and a fresh breath of air.  It was cool to see an art exhibit within a former state penitentiary and I appreciated the meaning behind each art installment.  I think it's definitely worth it to take a visit to Alcatraz to see, hear, and read the artwork for yourself.  My favorite pieces were With Wind and Stay Tuned.  The art exhibit runs till April 2015.

RECIPE: (Paleo) Chocolate Muffins

I know, paleo chocolate muffins may sound gross to some people.  But these muffins are really good.  They taste like chocolate cake from the good ole' Pilsbury box mix - chocolate and fluffy.  I'm not sure if how I make these muffins make them paleo since I replaced the Enjoy Life Mini Chocolate Chips with Guittard Dark Chocolate Chips, but nonethless, these are pretty healthy chocolate chip muffins.  Great for breakfast or a pre/post-workout snack!

Super busy week - here's what my day looked like today:

  • 5:30am - wake up
  • 6:00am-7:30am - swim practice with Albany Masters
  • 8:30am - breakfast
  • 9:00am - photoshoot with NutHouse Granola in Berkeley
  • 10:30am - meeting with Michelle Tam from Nomnompaleo in San Mateo
  • 11:30pm - quick lunch at Whole Foods Market San Mateo (sushi + kombucha)
  • 12:30pm - 5:00pm - photoshoot for Whole Foods Market Nike Women's Half Marathon sponsorship
  • 5:00pm-6:00pm - stuck in SF traffic!  woot!
  • 7:00pm - Christine's Catholic wedding rehearsal
  • 8:00pm - home at last with dinner and cheesecake!

One highlight from today - meeting Teddy, a 6 year old Pomeranian dog with his owner.  Him and his owner walk to Golden Gate Park everyday to people watch.
